Ingredients:
1 cup quinoa ( red or white )
Two cups of diced vegetables
(Yellow , red bell pepper
Onion ,Carrot ,Sweet corn etc)
1 Chopped green chilli
1 tsp Grated ginger
1 tsp Sesame
¼ tsp Mustard seeds
2 tsp olive oil
¼ tsp black pepper powder
Juice of ½ lemon
½ tamarind paste
Roasted melon/ sunflower seeds/
peanut (optional)
Garnish:
Coriander/ celery/ rocket leaves
Olives
Strawberry
Procedure:
1. Wash 1cup quinoa, boil with 1 ½ cup of water in a covered pan .
2. Heat oil in a pan , splutter mustard , add chopped chilli , ginger , put off the heat and keep aside .
3. Toss chopped vegetables in 1 tsp oil add salt and black pepper powder. Remove from heat .
4. Mix all the ingredients add lime juice, tamarind paste(optional ) and any seeds of choice .
5. Garnish with fresh green leaves of choice coriander/celery /rocket leaves and olives / strawberry.
Note : This salad is low on calories and rich in protein.
